Every Office file is a zip of XML parts, and several of them are about you rather than your content: who created it, who last saved it, your company name, how long it was open, and an ID for every editing session. Tracked changes stay in the document, and each one still names the person who made it. Accept or reject them in Word before you strip.
Images embedded in the document keep their own EXIF and XMP for now. If a photo inside the file matters, run it through the photo tool first and re-insert it.
Word generates a new rsid (revision save ID) every time a document is opened and edited, and stamps it on the text written in that session. Two documents that share rsid values share an ancestor: the same template, the same draft, the same author machine. Document Inspector does not touch them. StripShot removes every rsid attribute from the body and the rsid list from settings.xml, so the clean file carries no editing lineage.
Workbooks and decks use the same docProps parts, so the author, company and editing time come out the same way. In a .xlsx, StripShot also cleans hidden characters out of the shared strings table, which is where cell text lives. In a .pptx it cleans every slide. Speaker notes, charts and embedded media are left alone.

Document Inspector removes the properties it knows about, but it leaves the rsid session IDs stamped on every paragraph, and it does not look for invisible characters in the text. Both can identify a document or its origin.
